Rice Sauce Preparation Steps
In a pot, put the chicken pieces. Then add the minced garlic, chopped onions, seasoning cubes, scotch bonnet pepper, Thyme and Curry powder. Pour sufficient water to cover the pot content and place on your cooker or stove. After about 25minutes of cooking, add salt.
Do not add salt at the beginning as it toughens the chicken and that will elongate the cooking time. With medium heat, it should take 30 minutes. Remove the pot off the stove or cooker once the chicken is done. Separate the chicken stock from the chicken and set aside.
In a different bowl, pour little water into your cornstarch or cornflour and stir very fast so as to prevent it from forming clumps. It’s good enough once it is of dropping consistently. With low heat, gradually add the starch to the chicken stock, at the same time keep stirring in order to mixes appropriately and to prevent clump.
Allow to cook for 3mins until it thickens. Then pour the chopped vegetables as well as the chicken and then cover to boil for additional 5mins. Take off the stove or cooker and your sauce is ready. You can enjoy rice with it
