How To Prepare Nigerian Rice Sauce

Nigeria sauce is a tasty vegetable sauce that gives rice an entirely different taste. It is simply wonderful with rice. It’s simple to prepare and it often gives the entire house a wonderful aroma every time. What makes this sauce unique is the colored vegetables combination added to it which gives it that wonderful unique aroma, color as well as taste.

Ingredients for Sauce

1Kg cut Chicken

2 diced Yellow Scotch Bonnet pepper

2 Green ball pepper

1 diced red scotch Bonnet pepper

1 minced of clove garlic

7 small-sized carrots

1/2 cup corn starch

1 handful of diced Green beans

Seasoning cubes

1 diced big bulb Onion

1 teaspoon of Thyme

2 teaspoons of Curry

Salt

Note: All vegetables should be chopped in large sizes, up to 1 inch long.

Rice Sauce Preparation Steps

In a pot, put the chicken pieces. Then add the minced garlic, chopped onions, seasoning cubes, scotch bonnet pepper, Thyme and Curry powder. Pour sufficient water to cover the pot content and place on your cooker or stove. After about 25 minutes of cooking, add salt.

Do not add salt at the beginning as it toughens the chicken and that will elongate the cooking time. With medium heat, it should take 30 minutes. Remove the pot off the stove or cooker once the chicken is done. Separate the chicken stock from the chicken and set aside.

In a different bowl, pour little water into your cornstarch or cornflour and stir very fast so as to prevent it from forming clumps. It’s good enough once it is of dropping consistently. With low heat, gradually add the starch to the chicken stock, at the same time keep stirring in order  to mixes appropriately and to prevent clump.

Allow to cook for 3 mins until it thickens. Then pour the chopped vegetables as well as the chicken and then cover to boil for additional 5 mins. Take off the stove or cooker and your sauce is ready.  You can enjoy rice with it
