How to Cook Coconut Rice Best Nigerian Recipe

Coconut rice is a simple but flavorful meal that goes well with stir-fries, curries, beef or chicken. Coconut rice maybe enjoyed with vegetables or protein. Fried chicken is not a bad idea. It’s quite simple and easy to cook. After I ate coconut rice for the first time, it became part of my favorite meals.

The great taste of coconut rice makes my day. Make it an option when you want to add another dimension to rice other than the usual rice boiling. Taking a look at its ingredients and you’ll see that the nutritional constituents of this delicious recipe cannot be over emphasized.

Ingredients for Coconut Rice

2 cups of rice

1 cup of coconut milk (Can be made at home by grating coconut skin, mixing in small proportion of water and straining the water)

3 cups of water

Spices to taste (pepper, maggi or onga, pinch of curry)

1 teaspoon of salt

Coconut Rice Preparation Steps

Place the rice to be cooked in a sieve or colander. Just two cups of rice in a sieve or colander and thoroughly rinse the rice under a running, clean and cold water until the water is coming from the rice is clear. Just ensure the rice doesn’t fall through the sieve in the process. You may also position the sieve on a bowl in order to catch any of the rice grains that may want to fall out.

Drain off water from the rice. After this, pour the rice into a pot and  the cups of coconut milk with spices mixed in. Add the three cups of water to it, as well as the teaspoon of salt.

Then boil the combination over a period of time. Stir it from time to time so as to keep the rice from clustering together.

Bring down the heat and allow the rice to simmer for 10 minutes. In case the water is dried and the rice seems hard, then pour in additional water to the food and continue to stir to make it more fluffy. Once it’s done, serve. Serve the rice with chicken, beef, or a vegetable mixture.
