How To Make Cake the Nigerian Style

I love this sponge cake recipe. This particular sponge cake recipe is a classic sponge cake and once you get it right the first time, you will discover that it is very easy to prepare. The best part of this recipe? You require just four ingredients to make it. Yes you heard right, Four.

It takes about 15 minutes to mix and 25 minutes to bake; making a total time of 40 minutes.

Ingredients for Nigerian Sponge Cake

1 cup all-purpose flour

1 cup granulated sugar

½ tsp baking powder

6 large eggs

Steps To Baking A Simple Sponge Cake

Preheat Oven to 350˚F. Line bottoms of two 9″ cake pans with parchment paper (do not grease the sides). You can also used a big pot on a stove or gas cooker. Be sure to create a elevation for the cake using a wide rim stainless cup or plate. You can use two or more to make sure the cake tin is balanced. Don’t use sand to bake your cake, it would only leave you with severely burnt cake and might even get into the cake.

In a mixing bowl, whisk 6 large eggs for 1 minute on high speed. With the mixer still on, add 1 cup sugar a little at a time and continue beating 8-10 minutes until thick and fluffy. If you don’t have a mixer, you can used a heavy spatula, a big coke bottle or mortar and pestle.

Whisk together 1 cup flour and ½ tsp baking powder then sift this mixture into the fluffy egg mixture one third at a time. Fold with a spatula with each addition just until it is well mixed. Scrape spatula from the bottom to catch any residue of flour. Avoid over-mixing in order not to deflate the batter.

Pour the mix into the cake pans and bake at 350˚F for about 25 to 30 minutes or until the top appears golden brown. Bring the cake out of the pan by sliding a thin spatula around the edges. Cool cakes to room temperature then slice layers with a serrated knife.

There are different varieties of sponge cake but this kind is by far the easiest to make. Notice I didn’t include milk in the ingredients. This is because it tends to go bad much faster when you add milk.

Enjoy your sponge cake with a cup of coffee, tea, cocoa or homemade juice.
