How to Make the Best Nigerian Pancake

A pancake is a yummy, flat and round cake which is prepared from a starch-based batter. Pancakes often contain milk, eggs, and butter. It’s usually cooked on hot surface such as a frying pan using butter or oil.

Amidst all the breakfast meal, pancakes remains a popular breakfast dish loved by many. In our opinion, everyone should master the act of making pancakes because its one of the 7 wonders of the world.

Even if you may have been struggling with the common pancake problems of burned bottoms and raw interiors with a well prepared batter and some practice on the stove, you can attain pancake perfection.

Ingredients for Pancake

2 eggs

1 teaspoon of vanilla essence

1/2 cup of caster sugar

2 cups of self-raising flour

Butter

1 cup of milk

Maple syrup

Pancake Making Steps

Whisk the eggs, milk as well as vanilla together in a bowl. Sift the flour into a bigger bowl. Pour in sugar and stir. Make a well right in the centre. Pour in milk mixture. Whisk until all is well mixed.

Put a big non-stick frying pan on stove or cooker and apply heat of  medium heat. Grease the pan with butter or you may spray it with cooking oil.

With 1/4 cup of mixture of pancake, prepare 2 pancakes for about 2 minutes or till it show bubbles on the surface.

Turn it over and cook for another 2 minutes for it to get well cooked. Transfer to a different plate and loosely cover it with foil to keep it warm.

Repeat the process with remaining mixture, ensure you grease the pan with cooking oil or butter in between batches.

After you have successfully finished the batches, then you can serve. You may serve with maple syrup including extra butter. Its really taste great.

How to Make Healthy Pancakes

Simply replace the white flour with whole wheat flour, oat flour or quinoa flour.

Instead of regular cooking oil you can use coconut oil or olive oil. It’s better if you use the spray versions of this oil on a non-stick pan. This would greatly reduce the amount of oil you’ll be using.

Finally, you can replace sugar with over ripe 4 bananas or 2 over ripe plantains.
